Take a little rice milk mixture and make it become stuck by cooking it longer in the saucepan. Spread on a baking sheet, do drawing with some coconut palm syrup and freeze for 2 hours. Remove from the tray, wait 10min for it to soften a little, then cut into circles. Put it back in the freezer. At the last minute, put it like a garnish of the drink.

After round one, I thought about a continuation of my concept. I previously did an “imperishable cocktail” to limit the waste. It was about never losing an ingredient by transforming it with natural conservation techniques. These techniques were used a long time ago to keep food for a long time and limit waste. For round two, I decided to look at the future. After having used the ancestral techniques, I wanted to see the future solutions we can find that are sustainable for the environment.

DESCRIPTION

I focused on common ingredients that are used daily are a godsend for the environment and if we were better aware we could limit our consumption and find alternative products to it.

I did a twist of “the café frappé.” This drink is made with coffee, sugar and ice. Some ingredients we consume daily. I took these and found a more sustainable alternative to present my cocktail: Blue Wake. The coffee can be substituted by chicory roots that are natural and sugar from coconut palm sugar which is also sustainable.
I decided to serve it in a Kimura glass with crushed ice. The crushed ice is there to symbolically show how fast the warm can have an impact on our products. People can understand that if the climate continues to be warmer like this, some cultures will not be able to continue to be. We will lose some flavor and our next generations will not be able to try it! As fast as ice is melting on earth, as quick as we have to change our way of consumption for a better future and a sustainable life.

In the other form, similar to my first round you can drink it in a can. Take it with you and share it around. When you share the can, you share the commitment there is behind it: showing people that we can change our daily habits, our daily product to be helpful for the ecological issue. And what better than to try it with the can to trust it!

Come to Le Syndicat, hear the concept, be aware of products that can substitute unsustainable foods and bring the cans to share the values and the taste with your surroundings.

Like the « café frappé »: coffee, sugar and water. I decided to substitute the coffee and the sugar which are two daily products that we use everywhere. I found vegetable and natural ingredients have pretty much the same taste but a better earth impact. I add rice milk to obtain a smooth texture and length in the mouth in this vegan cocktail.

The chicory to substitute the coffee: Coffee is one of the most polluting products that exist. It causes deforestation and grows in tropical regions. Each year, demand increases. It’s true that a cup of coffee is like a tradition. In the morning, after lunch, to meet a friend, there are always good excuses to drink it. It’s a habit we could change to limit the ecological disaster it creates. But for this, people need to be aware and realize that other products we have can be substitutes.
My idea for choosing chicory roots is to talk about it and make people directly try the taste thanks to Blue Wake cocktail.

Roasted and infused with a nutty, caramel taste, a caffeine-free hot drink the chicory is a good alternative that can be enjoyed from morning to night. Between hot or cold, I decided to work on it cold because of the cocktail taste, the summer effect and to further demonstrate the different ways in which it can be consumed. In daily life, if people are convinced by this, people who want caffeine can just do a mix coffee- chicory (50-50). At least, this would halve our consumption. For people who just have this coffee habit without a real need for caffeine, they could replace the « coffee friend meeting » by a « chicory friend meeting ».
The coconut palm sugar to substitute the sugar: By destroying habitats rich in animal, plant and insect life, sugar is said to be the plantation that destroys the most biodiversity in the world. I chose coconut palm sugar instead, a product that is not known by a lot of people but that deserved to be. In fact, the culture of this product is far more sustainable than other sugars on the market. First, coconut palm sugar comes from the sap of the blossoms, the trees will continue to produce flowers, which in turn will play their part in the production of coconuts. This means no loss or destruction of the trees. The United Nations (UN) has recognized coconut palm sugar as the most ‘sustainable’ sugar, both in terms of food and agriculture. Coconut is a low-water, low-maintenance tree that naturally produces up to 75% more sugar per hectare than sugar cane. The brand I used is certified 100 % natural and hand-harvested, artisanal product. Behind it, there is a project to support local populations (schooling, infrastructure, living conditions, etc.). I think it’s better to buy this one rather than industrial sugar. I used the Écoidées bio coconut palm sugar for your information.
In addition, to sweeten our food we need less coconut palm sugar than cane sugar because its sweetening power is stronger. A pack will last us longer and thus limit over- consumption. Also, it has more nutritional benefits than other sugars.

The rice milk to substitute the cow’s milk:
Rice milk causes less than 40% of the CO2 emissions generated by cow’s milk. In general, all vegetable milks are better for the environment. For the flavor, I decided to use this one because of its creamy and sweetness that is close to the cow’s milk. To change the habits of a person, the easiest way is to find a product that can substitute it the most in terms of taste.

Cans: I told you in the first round of my previous application, that in terms of sustainability the cans are the future. It’s clearly has less bad impact on the earth than glass or plastic.
To have a better impact and help the ecological problem, it’s good to bring people together. As many people as possible. For those who are living in Paris, they can just stop by Le Syndicat, talk about the sustainable concept and try the cocktail. For those who come from other cities, the can seem to be the solution. They can be sent to them. People who are convinced by the values can also take them away and share them with their friends.
To help people recognize it the Blue Wake logo is strong and recognizable. The colors are attractive and the cans are fancy street style. It could be like a trend with a strong visual and ecological values.

I think Hennessy fits in the concept of changing habits and bringing people together. As the cognac Hennessy is spread all over the world, it became a real trend, a real way of drinking French cognac. Hennessy reaches this point where we don’t drink a cognac but we drink a glass of Hennessy cognac. It became a habit that even celebrities follow and used. Looking through that success of the brand, I wanted to follow with Blue Wake to make people act differently. Change the mind thanks to the taste of a product that makes you discover new horizons. Think for a positive change and as Hennessy does, make it become a habit.
Just as Hennessy made a first exportation in 1794 in America followed by Russia, India, and the world, I decided to create this concept like it was in 2023 with these cans, able to travel all over. This cans with the strong cause that goes with it.
